WHere is a simplified interpretation of a cocktail found on the seasonal cocktail list. This is a large-volume pre-mixed which is loaded with the tastes of the Christmas time, which makes it perfect for your celebration. Any leftover syrup you can use for breakfast cocktails, desserts, or to make another batch of the drink.
The Bikini Cocktail
Serves 10 servings
For the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Place every items into a pan, bring to a simmer, mixing to dissolve. Then, remove from the burner allowing it to cool fully. Transfer into an sealable bottle, cap it and store in the fridge, it will last for up to a month.
To make Premix: Pour the specified liquid ingredients into one large bottle, let it rest for 60 minutes, then filter it , ideally through a fine cloth, to ensure it's fully clarified.
For serving: Add 85ml from the cocktail base into a mixing glass containing ice, and agitate carefully for a minute until cold. Filter into an chilled martini glass or similar, garnish with the cranberries adding the final touch with a quick spritz with the mandarin essence above the glass.
